Recipe: Banana, walnut and chia bread

There’s just something about freshly baked banana bread that conjures up all those beautiful, familiar feelings of home.

Not only is it simple to make, but if you’re like us and don’t like seeing any food go to waste, it’s also the perfect recipe to use up those over-ripe bananas.

So if you’re spending more time at home, why not give our Chef’s favourite banana bread recipe a go? Incorporating the goodness of walnuts and chia seeds, this recipe is sure to please!

Ingredients

Banana bread
100g Butter
300g Caster sugar
250g Plain flour
2 tsp Bicarb soda
2 x Eggs
70g Natural yoghurt
1 tsp Vanilla essence
300g (approximately three) Bananas, mashed with a fork
25g Chia seeds
¼ cup Water
100g Walnuts, chopped

Spiced Maple Walnut Butter
100g Butter, salted
20g Maple syrup
Pinch of Cinnamon
Pinch of Mixed spice
2 tbs Walnuts, chopped

Method

Step 1 | Soak chia seeds in water, set aside

Step 2 | Add butter and Caster sugar to a mixing bowl and cream with an electric mixer

Step 3 | Add eggs, one at a time, while continuing to beat together. Add vanilla essence

Step 4 | Mix in flour and bicarb soda until just combined

Step 5 | Add yoghurt, mashed banana and soaked chia seeds, mix

Step 6 | Stir in chopped walnuts by hand

Step 7 |Pour into a lined, greased cake tin or loaf pan

Step 8 | Bake at 160 – 170C for 35-40 minutes or until a skewer comes out clean

To make spiced maple walnut butter
Step 1 | Beat butter, maple syrup and spices together until soft

Step 2 | Stir in chopped walnuts

To serve
Cut banana bread into slices and serve warm with spiced maple and walnut butter. Bon appetit!
