Ingredients
180g Chocolate buttons (milk or dark)
115g Butter
180g Caster sugar
2 Eggs
30g Cornflour
30g Cocoa powder
50g Hazelnuts
Method
Step 1 | Preheat oven to 160C
Step 2 | Roast whole hazelnuts in the oven for 10 minutes
Step 3 | Remove from oven and cool slightly. Rub hazelnuts between two tea towels to remove some of the outer skin
Step 4 | Roughly chop hazelnuts
Step 5 | Reduce oven to 140C
Step 6 | Melt chocolate buttons and butter together over a double boiler and stir until smooth
Step 7 | In another bowl, whisk eggs and sugar with an electric mixer until light and fluffy
Step 8 | Fold in sifted cocoa powder, cornflour and chopped hazelnuts
Step 9 | Pour mixture into a small slice tin or 20cm square cake tin lined with greased baking paper
Step 10 | Bake for 25 – 35 minutes (cooking time may vary depending on the oven and depth of the brownie)
Step 11 | Remove from oven and cool. Cut into squares and serve.
Serving suggestions
With coffee | Cut into small squares and dust with icing sugar
Afternoon tea | Cut into small rectangles and coat with chocolate ganache, serve with hazelnut praline
Dessert | Serve warm with ice cream or cream, poached fruit or fresh raspberries
